Fleur de Chevre | Poitou Charentes. Unpasteurised Goat's Milk. 1 unit (150g). Drum-shaped cheese with a thin natural rind and a fresh, light texture. Wrapped in a protective vine leaf, it is an ideal opening cheese on your board.

Triple Creme | Cousance-les-Triconville, Pasteurised Cow's Milk - 1 unit (550g) -a triple cream cheese lightly covered with a bloomy rind. The cheese is rich and silky on the palate.

Mrs Kirkham's Lancashire | Goosnargh. Lancashire, Unpasteurised Cow's Milk. (200g). The cheese can be eaten fresh & crumbly with a tangy lactic aroma & taste, or alternatively, after a few months maturing the cheese becomes denser & fuller bodied with rich mineral & earthy flavours & crème fraïche tanginess.
- Taleggio | Bergamo, Pasteurised Cow's Milk (200g). The texture is creamy, with a rich, melting quality that is not too salty, but has a lovely sappy floral flavour.

Beauvale | Nottinghamshire, Pasteurised Cow's Milk (200g). Perhaps fruitier and better balanced than other Roqueforts, the pate switchbacks beautifully between the creamy curds and grittier blue moulds.
