ABV 17%, Shodoshima Brewery, Junmai Grade, Rice Polishing Ratio: 88%
Flavours of Citrus Fruit and long lasting minerality combine effortlessly in this unique Sake. Served chilled in a white wine glass, or served warm in a ceramic/porcelain ochoko.

Sakura Brique, Poitou, Unpasteurised Goat's Milk - 1 unit
Sakura showcases sweet, almond notes from the cherry blossom leaf, used prominently in Japanese cuisine, as well as a delicate balance of distinctive flavours from the goat's milk. A truly elegant cheese.

Comte Sainte Antoine Reservation, Franche-Comte, Unpasteurised Cow's Milk - 200g
Ivory-coloured pate, with a rich, nutty flavour and a golden brown rind. In the style of a distinct Gruyère, with a hint of caramel sweetness. We select mountain-aged cheeses stored in traditional cellars close to where they are made.

Beenleigh Blue, Devon, Pasteurised Sheep's Milk - 200g
While this cheese is produced year-round it is distinctly seasonal (it is in peak shape August - January), due to the changing pasture conditions for the sheep. Initially intended as Britain's answer to Roquefort, this blue – in a roundabout and ultimately accidental way – perfectly showcases the concept of terroir. The pate, which is solid, rich, and slightly crumbling, has a soft tanginess, bordering on yoghurt and fresh nuts, that balances well with the pale blue veining.
The board includes a packet of Biscuits for cheese.
